No, the Vaulting Pole in Animal Crossing New Horizons is not breakable. I am happy to inform you that you’ll never get stuck on one side of the island after jumping across a river. And even if it did, you can never really get stuck in New Horizons, even if you glitch between rocks. All you have to do is call the Rescue Service. Just bring up your Nook Phone by pressing ZL. Then, use the Rescue Service app (the helicopter icon). Somebody will come and save you from wherever you are. However, you won’t have to worry about this when it comes to the Vaulting Pole; it will not break.
